Veg Thukpa Recipe | Easy Vegetable Thukpa Soup

Presenting a classical street style Tibetan Noodle Soup – Veg Thukpa Recipe. Thukpa may sound like a funny name, but it has a very simple meaning and it defines the dish well ! Thukpa means noodle soup.

You can either use dry egg noodles which we’ve been eating since our childhood. Ideally, Thukpa variations revolve solely around different types of noodles. Some prefer adding flat noodles whereas some prefer adding dumplings, some prefer adding wontons. Today we will discuss the readymade noodle version soup.

Thukpa is a dish that should be savoured with family! It’s important to know that you can’t make Veg Thukpa Recipe in small quantities. It has to be hearty and healthy, it should be as filling as a dinner meal or it can be a filling snack for a peaceful rainy evening.

Ingredients For Thukpa Paste

  • 2 Inch Ginger (Peeled & Roughly Chopped)
  • 2 Medium Sized Tomato (Diced)
  • 2 Onions (Roughly chopped)
  • 5 nos. Fresh Red Chillies
  • 2 tsp Sesame Oil
  • 2 tbsp tender Coriander Stems (Chopped)
  • Salt to taste

Ingredients For Boiling Noodles

  • 1 ltr water
  • 1 pkt noodles
  • 1 tsp Oil
  • Salt to taste

Ingredients For Chilli Oil

  • 1/2 cup Oil
  • 4 nos. Garlic cloves (crushed)
  • 2 tsp Toasted white Sesame seeds
  • 2 tbsp Chilli Flakes
  • 1 tbsp Light Soy Sauce

Ingredients For Veg Thukpa Recipe

  • Prepared Thukpa Paste
  • 2 tsp Oil
  • 2 medium carrot (julienned)
  • 10-12 Mushroom (sliced)
  • 1/2 small Cabbage (julienned)
  • 4 cups Vegetable Stock
  • Prepared Fresh Noodles
  • 8 – 10 French Beans (diagonally cut)
  • 1/2 tsp Vinegar
  • 2 tsp Sesame Oil
  • 1/4 cup Spring Onion (chopped)

    For Assembling Veg Thukpa Recipe

    • Cooked Thukpa
    • Boiled Noodles
    • Prepared Chilli Oil

    For Garnish

    • Coriander Sprig (chopped)

    Instructions For Thukpa Paste

    • In a bowl, add onions, tomato, ginger, fresh red chillies, coriander stems, sesame oil and salt to taste.
    • Transfer it to a grinder jar and make a smooth paste. 
    • Keep it aside for further use.

    Instructions For Boiling Noodles

    • In a pot, add water and get it to a roaring boil. 
    • Add noodles and boil it for 5 minutes on high flame.
    • Transfer it to a tray, add oil and mix it well.
    • Keep it aside for further use.

    Instructions For Chilli Oil

    • In a pan, add oil, garlic cloves, toasted white sesame seeds, chilli flakes, and cook it for a minute.
    • Add soy sauce and mix it well, transfer it into a bowl and keep aside for further use.

    Instructions For Veg Thukpa recipe

    • In a wok, heat oil, add prepared thukpa paste and cook it for 4 – 5 minutes until thick or cooked well. 
    • Add mushroom, carrot, cabbage and saute for a few minutes until half cooked.
    • Add vegetable stock and simmer it for a while. 
    • Add prepared fresh noodles, french beans, spring onion, vinegar and let it boil for 5-6 minutes until cooked well.
    • Finish it with some sesame oil and transfer it to a serving dish.
    • Garnish it with boiled noodles, coriander sprig and prepared chilli oil.
    • Serve hot.
