Vada Pav Recipe | Easy Mumbai Style Vada Pav in 30 Minutes

Hello foodies ! Today we will discuss the recipe of Original Indian Burger “Vada Pav”. It is very simple and easy recipe. What are we supposed to do about our 4 pm Snack cravings, do you know what does Mumbai do when it craves for 4pm snacks ?

Mumbai goes and buy its fuel and Vada Pav is the fuel for Mumbai. In 1966 “Ashok Vaidya” opened his shop outside Dadar Station, Mumbai, he realised that people are in a hurry because they are in a rush, either to reach home or to office. Similarly, they are in a hurry to get out of the train or get in it.

So he thought, serving people messy food when they are in a hurry, will not work. Hence, he created a quick snack dish which anyone could carry effortlessly to their offices or homes. This dish was named “Vada Pav”. This dish was invented by Mr. Ashok Vaidya in 1966.

Ingredients – Vada Pav Recipe

  • 4 green chillies (crushed)
  • 6 garlic cloves
  • 1/4 cup oil
  • 4 boiled potatoes (mashed)
  • 1 tbsp mustard seeds
  • 1/4 tsp asafoetida
  • 2 spring curry leaves
  • 1/2 tsp turmeric powder
  • 2 tbsp finely chopped coriander leaves
  • Salt to taste

Ingredients For Batter

  • 1 cup gram flour (besan)
  • 1/4 tsp Red Chilli Powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Water as required

Ingredients For Chilli Fry

  • 5-6 green chillies (slit)
  • Oil for frying

Ingredients For Vada Pav Chutney

  • 1/2 cup peanut
  • 2 tbsp oil
  • 5 garlic cloves
  • Salt to taste
  • 1/2 cp fried besan batter crumbs (boondi)
  • 2 tbsp red chilli powder
  • Oil for frying

Instructions For Vada

  • Heat oil in a pan, add mustard seeds, asafoetida, 3 crushed garlic cloves, crushed green chillies, curry leaves, turmeric powder and boiled mashed potatoes and mix well.
  • Now, add salt coriander leaves and mix it well. Keep aside for further use.

Instructions For Batter

  • In a mixing bowl, add gram flour, turmeric powder, red chilli powder, salt to taste and required water as per the consistency and mix well.

Instructions For Vada Pav

  • Heat oil in a pan, add green chillies, garlic cloves and fry them well. keep them aside.
  • Heat a pan, add 1 tbsp oil, peanut, fried garlic cloves, fried besan batter crumbs, red chilli powder, salt to taste mix well and transfer it to a grinder and coarsely grind it.
  • Now make a medium size ball of potato mixture and deep into the batter and fry them till golden brown.
  • Slit the Pav bun keeping one end intact, apply green chutney (optional) on both sides and then sprinkle some prepared garlic chutney.
  • Flatten the vada and place in center.
  • Serve with Fried Green Chilli and Peanut chutney.

Tips :

  • Instead of making fried besan batter crumbs at home, you can use readymade boondi which is easily available in market.
  • Steps to make green chutney – add 1/2 cup coriander leaves, 3 green chillies, salt to taste, 2 tbsp lemon juice, water as required and make a smooth paste.
  • Curry leaves are very essential to give it a nice and aromatic flavor.
